Pesto is so simple to make. You can make it in big batches and freeze in parts in the freezer. I use ice cube trays, it makes good portion sizes when un-freezing. For a quick and delicious dinner, I roasted asparagus and mushrooms, cooked a little pasta and threw it all together with the pesto. I also made a simple salad with warm bread and…voila dinner!
